Olivarera Nuestra Señora del Carmen

Nuestra Señora del Carmén is in the town of Priego de Córdoba (Zamoranos), in Cordoba. The olives are cleaned and washed in the mill, and in the cleaning areas there are powerful turbines that mainly get rid of the leaves and branches. Stones and mud on the olives are washed off in a hydraulic tank and with a sieve system. When the olives are clean they are placed in another hopper where they are weighed, and a mechanical device collects samples of the product to be analysed and to determine its quality and oil richness.

In Almazara Nuestra Señora del Carmen mill, the best hygiene conditions are guaranteed throughout the entire oil making process, because when the olives get to the factory they are cleaned and washed automatically first, then they are crushed and afterwards the oil is extracted in stainless steel machinery.

The oil is produced in Almazara Nuestra Señora del Carmen using the most modern methods, with continuous two-phase ecological system machinery. They are committed to respecting and preserving the environment, so they have machinery that obtains another component when pitting the olives: the stones (ecological fuel). Nowadays it is used for heating, and at the mill they use this fuel themselves or sell it to customers.
