Wild asparagus and garlic with egg

Ingredientes

For 4 people
  • 800 / 1 kg of wild asparagus
  • 4 eggs
  • 1 teaspoon of cumin
  • 2/3 garlic cloves
  • 1 onion
  • 4 slices of fried bread
  • 1 litre of water
  • Salt and vinegar

Preparation

Cook the asparagus and put to one side.

Poach the onion in the pan until it turns transparent, add the cooked and asparagus and lightly fry. Add a splash of vinegar and a large glass of water and leave to boil.

Fry the slices of bread and make a paste with the fried bread and garlic. Add the asparagus.

Beat the eggs, add them to the mixture, and stir until it thickens, check to make sure there is enough salt and ready to serve...
