Located in Villanueva del Arzobispo, Castillo de Bujaraiza Cheese is prepared in the heart of the Sierras de Cazorla, Segura y las Villas Nature Reserve: a small family business making traditional, farm-produced cheese.

Castillo de Bujaraiza cheeses are prepared from recently milked goat's milk, rennet and salt, with no additives, preservatives or fermenting agents. The goats are milked right here on the farm and the milk is then transferred to the dairy.

Ángeles and Tomás insist that their cheeses are based on traditional recipes, 100% milk, rennet, and salt: mature, semi-cured, semi-cured with rosemary, semi-cured with thyme, semi-cured with paprika and jugs of cheese in olive oil.
