The La Castilleria Restaurant is located amidst the beauty of La Janda, at the foothills of Vejer de la Frontera, in a setting full of nature. It is a place that surprises and enchants visitors. Located next to a waterfall, its tables among the trees create a pleasant microclimate. The kitchen is visible to the public, separated only by a glass wall. 

There, Juan Valdés stands out as the master grill chef par excellence, a guardian of tradition and an innovator on the grill. Along with his team, he prepares the various cuts of meat they offer, grilling them to perfection.

Castillería thus becomes a sanctuary of flavours, where mastery of meats takes centre stage. Here, they know breeds of livestock backwards and forwards – their characteristics, feeding, and butchering, as well as the perfect ageing and maturation that enhance every cut. They were among the pioneers in believing in retinto meat, a type of beef that is gradually gaining prestige.

Wood embers and fire are the only elements, preserving the natural identity of the local products awaiting your taste buds.
