Quesería El Cabrero de Bolonia
El Cabrero de Bolonia is an organic, country cheese producer, which uses milk from payoya goats shepherded in the El Estrecho natural park, in Bolonia. This is a family business that transforms the milk from its goats into handcrafted cheeses, made with care and cured in a stone ageing cave on poplar wood.
A small amount of excellent quality. The cheeses have natural flora and all the cheese rinds are edible.
If you want to enjoy a different experience, visit its dairy. There are tours for small groups by prior arrangement. The tour lasts about an hour and includes a detailed explanation on how cheese is made, from milking to the consumer, going through its peculiar cave for ageing the cheeses, where you can see the largest payoya goat's cheese in the world: 22 kilos!
El Cabrero de Bolonia makes semi-cured goat's cheese, mini balls of fresh cheese, cured cheese coated with lard and cottage cheese finished with a mouldy rind in different varieties: with almonds, with hollyhock, with pine nuts, with mustard seeds. Other products offered are creamy spreadable cheese, payoya goat's cheese rolls, cheese in oil, natural yoghurt and creamy yoghurt, etc.
