Seville-style beef

Ingredientes

  • 2 kg. beef round
  • 8 large onions
  • 4 garlic cloves
  • 200 g. toasted almonds
  • 100 g. ham bacon, very streaked with fat
  • 200 g. pitted olives
  • Pig lard
  • Saffron threads, cinnamon sticks, salt and pepper
  • Broth
  • 1 l. wine

Preparation

Clean the beef round of its fibres and fat then stuff it with strips of streaked ham, chopped almonds, sliced olives, diced garlic and cinnamon sticks.

In a separate pot, sauté the meat in pig lard until golden.

In another saucepan, lightly fry together the onion and garlic. Before it is done, add the piece of meat and enough wine and broth to cover itwith liquid.

Finally, add saffron and season with salt and pepper. Prick the meat to see if it is done.

When it is, take it out and serve it with lots of sauce.
