In 2011 is born Trattoria L’Impronta, in San Pedro de Alcántara (Marbella), elegant and with a unique ambience that transfers the client to an art gallery. Paolo Ghirelli wanted to have the best in his kitchen and called Chef Francisco Vacas.
The speciality of Francisco Vacas is traditional fresh pasta, made completely by hand, without cutting or filling machines. Lobster ravioli with prawn sauce or mushroom ravioli with truffles are just two of its varied delicacies.
It uses the finest in-season ingredients, like green and white asparagus, fresh broad beans and artichokes. The in-season boletus are undoubtedly what is used to make the most requested pastas.
The menu of Trattoria L'Impronta is an interpretation of the typical Italian recipes, its most emblematic products and dishes, fused together with international cuisine using the finest techniques, in the pursuit of excellence.
