Salmorejo - Cold tomato and bread soup
Ingredientes
- 500 g. breadcrumbs from baguettes
- 1.5 kg. ripe tomatoes
- 4 garlic cloves
- 4 tablespoons wine vinegar
- Olive oil
Preparation
After soaking and squeezing out the breadcrumbs, mix them with the peeled tomatoes which, together with the garlic, have been mashed in a mortar until it is a compact and uniform dough.
Mix this paste with oil and salt until it is a thick sauce. Serve it with chunks of Serrano ham and chopped hard-boiled eggs.
