Sacromonte omelette

Ingredientes

For 4 people
  • 150 gr. pork, veal or lamb brains
  • 150 gr. pork, veal or lamb testicles
  • 6 eggs
  • Peas
  • 100 gr. Serrano ham
  • Bell peppers
  • 4 chorizo slices
  • Potatoes
  • Olive oil

Preparation

After cleaning and scalding the brains and testicles in a pan of boiling water, cut them into small dice and sauté the pieces of brains and testicles in a saucepan.

At the same time, cook the peas, and fry the potatoes, cut into small chips, in plenty of oil. Sauté the peas with the chorizo, the Serrano ham, the brains and the testicles. Then add the potatoes.

Then beat the eggs and mix them with a bit of marrow, bell peppers and the sautéed mixture.

Cook the omelette over low heat, flipping it carefully.
