Sabiote
The village, situated in the geographic centre of the province, belongs to the Úbeda and Baeza region, a region of vast olive groves and cereal fields.
It has an interesting Castle.
History
The first human settlements we know of, date from Prehistoric times; some Bronze Age and Phoenician remains have been found.
During Roman times, this was the village of Julia Salaria, capital of the Salariense colony.
During the al-Andalus period, a fortress was built.
King Fernando III reconquered the village in 1226 and gave it to the Order of Santiago.
King Sancho IV claimed it for the throne. It received important privileges from the Catholic Kings.
King Carlos V gave the village to his secretary, Francisco de los Cobos.
