Oven-Baked Rolls with Wine

Oven-Baked Rolls with Wine is a typical recipe used in the cuisine of the Alpujarra mountains during Easter. It is during Holy Week that Pampaneira Casa Alfonso prepares them so that they are available during Lent for anyone who wants to visit Pampaneira.

Ingredientes

  • 1/4 litre of white wine
  • 1/2 litre of oil of the brand Oliva Virgen Extra Casa Alfonso (AOVE)
  • Unground aniseed
  • 100 grams of baking-soda (traditionally the “El Tigre” brand)
  • Sweet anisette
  • Cinnamon
  • 1,050 kg. self-raising flour
  • Sugar for sprinkling on finished rolls

Preparation

First, mix the self-raising flour with the baking-soda. Meanwhile the oven is preheated to 175ºC.

Once all the ingredients are mixed together, knead it until the dough is even and easily handled. Separate this dough into small balls to make the rolls.

Put the small balls-rolls in a (pre-heated) oven and bake them until they turn a golden colour.

Then leave them to cool. When they are not to hot to touch, then sprinkle abundant sugar on the rolls and make sure they absorb a good amount.
