Normally, its harvests are destined for the production of white wines, but occasionally and when the state of the market and the climate make it possible, the grapes are dried in the sun until they become raisons enabling the obtainment of sweet wines, such as the famous Pedro Ximenez. This is possible due to the early ripening of its vines: located on sandy land and gentle slopes facing the the midday sun, the picking of this winery's grapes begins twenty days before the neighbouring areas of Montilla.
