The cuisine has clear tendencies: country, mountains and seafood. Traditional recipes have been obtained so as to provide a very varied cuisine. Wild asparagus and edible thistles, fresh fish and seafood, the best meat. The highlight is the most authentic dish renowned throughout the world: chickpeas with langoustines, a culinary blend of seafood, mountains and countryside.
There are also typical dishes from Jerez like ajo campero (basically garlic and breadcrumbs), oxtail, seasoned liver, cabbage and Iberian pork fritters. Other specialities are Iberian pork, pork in Sherry, beef in almond sauce, Iberian pork cheeks, sea bream and langoustines from Sanlúcar.
