Inés Rosales is in the province of Seville in the town of Huévar del Aljarafe. The story of Inés Rosales begins in Castilleja de la Cuesta, small village in the Al-Xaraf (High Garden) of Seville. In 1910, a woman, Inés Rosales Cabello, in the kitchen of her own home used an old family recipe to produce a "Torta de Aceite" (sweet pastry), from a blend of ingredients originating from the three cultures making up the identity of Andalusia.

With the help of women from the town she started to sell her pastries one by one at the crossroads of La Pañoleta and in the old railway station in Seville, carrying them in wicker baskets.

From these two strategic points travellers took them to their final destinations and in a short time they found their all over Spain, giving rise to “Rosa Inés' Legitimate and Accredited Tortas de Aceite”. This is the birth of the first manufactured pastry product marketed outside the place where it was baked.
