Queso Payoyo Rural
Payoyo Rural makes cheeses with the milk produced by the farmers in the Serranías de Cádiz and Ronda mountains, more specifically in the natural parks of the Sierra de Grazalema mountains, Los Alcornocales and Sierra de las Nieves, acting as a stimulus for the maintenance of the different existing native breeds.
Their intention has always been to recover the traditional cheeses of the region: fresh, semi-cured and cured goat's cheeses, and the typical cheese of Grazalema, which is sheep's cheese and one made from a blend of goat's and sheep's milk.
In Grazalema the installations belonging to Payoyo Rural are to be found in a privileged location with views of the Guadalete river valley. The purpose of these installations is to present and promote cheese culture and several types of tour have been designed to do so:
a cheese workshop where, through a glass area, you can see payoyo cheese being made and even take part in the process depending on the type of tour arranged.
Payoyo cheese tastings, directed by an instructor with educational aims.
The facilities include: accommodation at Hacienda Las Hazuelas (34 people), lounge with kitchen fully equipped for events, shop–merchant's with local products as well as their own produce: payoyos cheese and yogurt, with the same products at the same price as at the factory in Villaluenga del Rosario.
The workshop activities and cheese tastings are aimed at groups of fifteen people or more.
