These are new dishes created based on traditional dishes and flavours. This philosophy has led to dishes such as duck liver pâté preserved in salt with fruit and nut sponge and trout roe, sea bass with roast aubergine and yoghourt and garlic sauce, or finely sliced entrecote with wine sauce and aniseed with yams and confitted baby vegetables.
Monday to Saturday, 1.30pm to 4pm and 8.30pm to 11.30pm. Sunday, 1.30 pm to 4 pm.
