Everyone knows about the grandeur of the landscapes of Doñana. Its flora and fauna, the Iberian lynx, spectacular marshes, the kilometres and kilometres of beaches in the Nature Reserve All are well-known treasures that are taken in by the eyes of every visitor who boasts to have visited the Doñana reserve.

But in this article, we want to show you a side of Doñana that may surprise many. We want to show you what these landscapes taste like. We will go to a hidden spotin the village of El Rocío, specifically to the Restaurante Toruño, where you can discover the delicacies of Doñana. From fish and shellfish to its most famous meat and desserts. A wide variety of dishes that we are warning you will make your mouth water.

Fish and shellfish, the best of the Atlantic 

Doñana cuisine is not complete without the flavour of the sea. The over 60 kilometres of beaches in the Nature Reserve are responsible for the delicacies such as this one you can see: the famous grilled sea bass, wild fish from the coast straight to your palate, that is film-worthy. Look at that!

And what do you think about the clams, recently collected from the banks of Matalascañas, and that sauce that will make anyone's mouth water...

Or the white prawn, another unquestionable protagonist of the sea, direct from Isla Cristina to your plate

This list of seafood delicacies is completed with octopus, molluscs, crayfish, anchovies, plaice, cuttlefish, the delicious scrambled cod, and of course the famous and highly-requested rice broth with red prawns.

A delicacy served in stew where you can serve yourself as many times as you like, and that we assure you can bring someone back from the dead!

Meat, the Mostrenca cow

From the sea we will move on to show you some of the protagonists of the pastures from the Doñana reserve: the Mostrenca cow or the marsh cow.

As early as the 10th century, there were already references of the existence of these animals in the marshes of Doñana.

These are cows that have adapted to the marsh, to surviving in these flooded terrains that are full of sandy scrubland that force them to be in continuous movement. This results in animals with a quite unique meat, with little fat, a strong and aromatic flavour be enjoyed both in grilled steak and with almond sauce

Desserts from the grandmothers of Rocío

After such a variety of both meat and fish dishes, now it's time for desserts, which will also impress you. The first, as you would expect no differently for this area, is called "flamenco rosado” ("pink flamingo"). It is a dessert served in the shape of a flamingo and it is made with ice cream, sponge cake, cream and fruit. Delicious!

There is also white custard, made with Almonte figs and poleá, a very Doñana homemade dessert that is eaten with honey from the flora of Doñana.
