Aceites Viana
Aceites Viana is in the Jaén town of Garcíez, it is a model oil mill within the sector, owned by the Salcedo family of the Casa Juanito restaurant in Baeza, opened in December 1997, located in an exceptional setting: the Sierra Mágina Natural Park, it only produces high-quality Extra Virgin Olive Oil.
Aceites Viana is a family oil mill where the oil is obtained from their own olive groves, and the family are personally in charge of the entire process: harvesting, producing and selling, so the production of oil is limited and home-grown.
The olive is harvested at optimum ripeness, not without first having been monitored all year round by the best technicians, watching for any possible plague or disease that may occur and advising on the pesticide treatment that should be performed in each area and at all times — all of this ensures that the fruit is of proven quality, the first link in obtaining high-quality Extra Virgin Olive Oil, always respecting the environment.
Once the harvest has been carefully done, separating the olives from the tree/ground, it is taken to the Aceites Viana oil mill in the least possible time and within a maximum of 7 hours from the start of the harvest, and this is when the production of the oil begins, the cleaning of the fruit and the subsequent cold pressing in less than 12 hours since it was harvested, Aceites Viana has the most advanced production systems, currently with a capacity for producing 100,000 kg. /24 hours, monitoring the entire process with their own laboratory, hence they are ready for any incident that may occur during grinding, with capacity for immediate response, which is fundamental for obtaining their precious oils.
