Family wine-cellar dedicated to the production and sale of wine. The wine-cellar was founded by Tomás Quiles at the beginning of the 20th century and produces wine using traditional craft processes. To achieve this the current cellar and the previous 4 generations have all preserved the arts of more than one hundred years ago. The traditional flavour of the wine-cellar can be observed in some of the large earthenware jars dated 1629.
Bodegas Domingo y Quiles are located in Galera, 150 kilometres from Granada. The vineyards stand 850 metres above sea level and the climate is so extreme that the temperature can change up to 30 degrees in a single day.
There are four areas: the first, where the wine process originates, is in a 40 m2 press where the grapes are manually selected and the separated from the stems. From there we proceed to a 60-square metre fermentation area, where the unfermented grape juice is placed in stainless steel tanks to be fermented at a mechanically controlled temperature. The third location is the stabilisation and ageing area, which is underground to avoid sudden changes of temperature. These two areas occupy a surface area of about 120 cubic metres where the wines rest and age in French and American oak barrels and then in bottles until they reach full maturity and can be released and put on sale.
