Mantecados La Colchona
Mantecados La Colchona, located in the province of Seville in the town of Estepa, has been in the market for over a century and a half and enjoys great renown and prestige, not simply by chance, but as a result of the hard work and dedication of each generation that has been responsible for preserving and improving the quality of its products.
It all started with Doña Micaela " (affectionately nicknamed La Colchona ), who dedicated the winter months to slaughtering pigs in the most stately houses of Estepa, using left-over lard to make what was called “mantecate” (similar to the "mantecado" or traditional Christmas tart of today).
These “mantecates” didn't last very long and quickly became very hard, so to prevent this Micaela dried out and warmed the flour, removing the moisture. This made a product that was firm on the outside and tender on the inside.
So it was this woman, La Colchona, who knew all the best "tricks" for making the most excellent and exquisite Christmas tarts.
