Quesos Sierra de El Real
Located in El Real de la Jara, the Quesos Sierra de El Real dairy prepares cheeses from raw sheep and goat's milk, rennet and salt, with no preservatives, colouring or additives, all completely natural.
The cheeses are cured on tables where they sweat for 20 to 25 days, it is the mountain air which cures the cheeses, enhancing the aroma and flavour of the cheese with all the subtle nuances that make this cheese such a real delicacy.
The animals graze in farms in the Sierra Norte de Sevilla mountains, and their basic diet is made up of shrubs like rockrose, mastic, heathland plants and natural whole grains.
