Hijos de Catalina Rodríguez Castaño is a family business that has been producing ham and cured meats for more than 40 years. Their experience is guaranteed by the tradition of a family of artisans who work hard day in, day out, to offer healthy products with a unique flavour and aroma.
The Salas family started off with a small drying shed in El Hijate (Alcóntar), with the brand Jamones Tío Emilio, and later on they expanded their production to Trevélez, where they are currently part of the Jamón de Trevélez Specific Designation Regulatory Body, with the brand Puente Viejo y La Solera, for Jamón de La Alpujarra ham.
The location of the drying sheds, 975 metres above sea level, between Los Filabres and Las Estancias mountains, in El Hijate (Almería), and the mountain wind provide the perfect cold temperatures and humidity to ensure top quality curing.
