The Tuna Museum, located in Conil de la Frontera, Cadiz, is an informative space created by Salazones, Conservas y Ahumados LA CHANCA to show visitors all the ancestral tradition that exists in this part of the Cadiz coast around the world of tuna: its capture and subsequent transformation.
During the tour you will learn how this jewel of the sea, the Bluefin Tuna, has been fished for over 3000 years. Our sight and hearing will be delighted as we enter a space that simulates the bottom of the sea, using audiovisual systems where replicas of ruins, sunken ships, and tuna nets seem to come to life until we reach the codend, the place where the tuna is caught.""
We also visit the reconstruction of a chanca (old processing room) where the fishermen of Barbate used to process their catches in the 50's (the decade in which our company was founded). The purpose of this area is for visitors to interact (learning about sea salt, cutting up the tuna into its different parts, etc.) and where the sense of touch will transport them back to that time.
We will see a giant model of our factory, where we will show the current production methods, combining the artisanal process with the latest technological and health advances: learning the details of salting, preserving and smoking. We will then see a live demonstration of the cutting of the tuna, known as 'ronqueo', where a specialist from La Chanca will explain the whole process while cutting up the tuna.
