This Carnival has today earned itself the role of Chipiona's most typical festivity. The tradition was revived in 1984, and while it maintains its roots and essence in the Cadiz Carnival, over the years it has become established as one of the most important carnivals in its own right to be held in the province of Cadiz.
A wide variety of gastronomic events take place every year during Carnival, with feasts featuring typical Chipiona dishes such as potaje, pringá, fried fish dishes, the poleá, cabrillá, costillá, pulpá, mejilloná and pajarillá.
But the highlight of Chipiona's Carnival is without a doubt the parade, thanks to the numerous groups who take part in the line-up and to the spectacular quality of the show, unique in the province.
Declared a festivity of Tourist Interest in Andalusia.
