Nuestra Señora de la Salud is in the Cordoba town of Castro del Río,the origin of this crop in this region can be positioned at the arrival of people from the area of the Mediterranean. All over the eastern and southern Iberian arch, along with their trade, the Greek and Phoenician settlers left a culture that has survived in these fields for many centuries of history. But it is to the south of the old Guadajoz River, the Roman "Salsum", where archaeological remains found in Cerro del Arca prove that this culture was consolidated with Rome and, improved by the Arabs, has reached our times.

The Nuestra Señora de la Salud cooperative and their partners, as heirs of this system, extract an extra virgin olive oil of exceptional quality from these silty marl muds where the traditional grape varieties of picuda, hojiblanca and picual varieties grow, which unites the fruity flavour of picudo, the almond notes of hojiblanco and the bitter wood taste of picual.

Of these three varieties, picuda predominates due to its singularity. A strong olive tree that tolerates the white limestone that predominates on the left bank of the river and which these olive growers call “Mata”; an enormous forest of ancient olive trees, grown in traditional fashion, reaching south over craggy areas until you see the first mountains of the Subbaetic range.
