In Castilblanco de los Arroyos, a small town in the Sierra Norte de Sevilla mountains, the ancient meadows are a testament to the interest that Mare Nostrum puts into recovering the tastes and sensations of the most genuine flavours. Mare Nostrum is decidedly committed to quality from source, with very limited production and paying particular attention to all the processes of preparation and finish, which makes it a small but impeccable workshop for dairy products.
They work with raw milk, native breeds, livestock grazing in pastures, and use only ferments from the milk itself. This knowledge allows them to offer a broad selection of exquisite cheeses that are really different.
They offer workshops on lactic curd production, as well as tastings where they show the facilities and 4 cheeses made by them are sampled when they are at their best. It is all washed down with a glass of wine selected for the occasion.
