At Casares and next to the natural area of the Sierra Crestellina, Quesos Sierra Crestellina is a small business run by a family who have been farmers and cheese-makers all their life. It has its own livestock, and its goat herd is immersed in programmes for native breeds and programmes for improving the quality of milk.

The livestock are fed with 100% natural pastures, making use of the natural resources in the area and getting the greatest energy and organoleptic efficiency in the production of the milk and, therefore, the cheeses.

As it is a traditional family industry, after milking, they themselves transform the milk into their variety of dairy products: fresh goat's cheese, mature goat's cheeses (semi-cured and/or cured) and homemade desserts made from goat's milk (cottage cheese, yoghurt, rice pudding, etc.). The cheeses mature with the scents and flavours that are typical of the pastures in these mountains.
