Quesería Monte Robledo

In Aracena, the cheeses by Monte Robledo come from the milk of the goats on their own estate, which graze on extensive pastures. They are fed on what each natural season offers them, such as strawberry trees, rockrose, acorns, etc. The estate is certified organic, and the dairy production is slight but rich and aromatic.
The Aracena cheese, which is also called “queso pestoso” because, during ripening, the cheese-maker turns it continually, dampening it and, in this way, the rind develops a typical microbial flora that grows on the surface, called “remelo”. It is made from raw goat's milk and ripened for approximately 2 months, at least.
The Monte Robledo cheeses can be made into a kind of biscuit, the so-called “torta de Aracena de cabra”. They also make it in oil, a spicy cheese which is also called “queso de todo el año“ or “queso de la abuela”. They also have cheeses that have been treated with rosemary, fine herbs, paprika... taking on the aromas of what is on their outside.
