Almond soup alpujarreña grandmother

Almonds, bread and garlic are the stars of this nutritious soup, which was great-grandmother Angelina's favourite dish. It can be a vegetarian or non-vegetarian dish, depending on the stock that is used.

Ingredientes

For 4 people
  • 100 g. almonds
  • 2 garlic cloves, or 4 if they're small
  • 1 slice of fresh bread or 4 from the previous day's
  • 1 litre of stock
  • Extra Virgin Olive Oil
  • Salt
  • Hard-boiled egg and diced ham (optional)

Preparation

Put the stock in a saucepan to boil.

In a small frying pan, add a drop of oil and fry the garlic cloves previously cut in half and peeled. Set them aside.

Fry the almonds in the same oil, unpeeled to preserve all their properties and prevent the oil in the almond from burning. Set them aside.

Fry the bread in plenty of oil, adding more oil if necessary.

In the olden days, all these ingredients would have been ground in amortar, but today we can use a blender, adding a little stock and salt. The blended mixture of almonds, bread and garlic is now added to the hot stock and left to stand for ten minutes.

In a bowl, great-grandmother put plenty of breadcrumbs and then poured the stock over it. She awaited a little for the bread to soak up the liquid and then added more stock until the bowl was full. As an adornment, it can be topped with some slices of boiled egg and some diced ham.
