Quesería Cortijo El Aserradero
Located on the outskirts of Alhama de Granada, Quesería Cortijo El Aserradero represents the third generation of stock breeders, a family that has always been devoted grazing goats in the Sierras de Alhama mountains. The art of producing goat's cheese has passed on from one generation to another, Alhama cheese being one of the most long-standing in Andalusia.
Quesería Cortijo El Aserradero produces cheese in the traditional manner with an incomparable flavour and aroma. The authenticity of your product is based on the use of fresh milk from their own goats (Murcia– Granada breed).
They produce high-fat cheeses with an intense aroma and flavour, produced one by one from recently drawn raw goat's milk curdled with kid goat rennet, it is then pressed, salted on both sides and matured for at least 60 days. They are turned daily so they sweat and acquire the unmistakable characteristics of good goat's cheese.
The cottage cheese has a light and creamy texture.
