There can be no possible dispute when it comes to saying that the Sierra de Cadiz has everything that is necessary for those who wish to enjoy nature, tourism and gastronomy. It is precisely on this last point that we want to focus in this article: to speak to you about one of the most famous cheeses in the world, which is produced in the Sierra de Cadiz: Payoyo cheese.
Payoyo is the name given to one of the types of artisan cheese produced in the province of Cadiz, specifically in Grazalema and Villaluenga del Rosario, possibly the most well-known and renowned internationally through numerous awards, such as the World Cheese Awards where this delicious Cadiz cheese was proclaimed a winner as the best cheese in the world.
Payoyo cheese comes from a type of goat that is indigenous to the Sierra de Cadiz, known as the "payoya” goat, from whose milk a totally organic and delicious cheese is obtained.
It is worth noting that Payoyo cheese is a brand and not a designation of origin, as some believe. These cheeses have become a real delicacy that can be seen at events of such standing as the Davis Cup, the famous Harrods store in London, specialist gourmet shops in the USA or in restaurants such as Tickets, by the brothers Ferrán and Albert Adriá in Barcelona, where they have acknowledged that - for over two years - it has been the tapa that sells most… there must be a reason for that!
A tasting for lovers of good cheese
