In the heart of the Almeria Sierra Nevada National Park and beside the wonderful river Andarax, is the next place we want to take you today to discover the typical Almeria Alpujarra dishes.

They named it La fabriquilla, and that's how it's know in Laujar de Andarax. An old light factory from the beginning of the 20th century, which now serves delicious char-grilled meat cooked on the barbecue which are a real delicay for anyone who passes by.

The first of the dishes we suggest is a typical, fundamental, classic which is named after the area and is the omnipresent "alpujarreño”. A classic to be found in almost all kitchens in the area and a calorific bomb, perfect for eating after a hearty hike through the area, and includes serrano ham, fried pepper, sausage, black pudding, fried egg and fried potatoes. Delicious and essential.

Cheese is another of the Almeria Alpujarra delicacies. Organic goat's cheese, which as a starter, bathed in olive oil, is as good as it looks.

Migas is another strong point of a good Alpujarras menu. Migas made with semolina flour, fried pepper, sausage, black pudding, fried bacon, herring, tomato and some olives. Sublime.

Char-grilled barbecue meats have always been an Alpujarra speciality. You can't miss a good Alpujarra barbecue when visiting the area and in La fabriquilla, they know what they're doing.

Rabbit, pork loin, pork shoulder, lamb and chorizo sausage will make your mouth water, before, during and after. Delicacies that taste amazing on the barbecue thanks to the flavour that the wood gives these meat, and together with some vegetables, they're a real delight. Those of us who have tried it are not exaggerating.

Another of the excellent classic dishes is the marinated partridge. Game meat, juicy and delicious and which is definitely a must if you visit the area, as it flies off the menus in the Almeria and Granada Alpujarra. Try it and you will find out why.

Cheeses, meats, a good wine from one of the bodegas in the Laujar valley, some migas or alpujarreño and... for dessert? For dessert, we bring you 3 homemade and traditional ideas from the Alpujarra such as pan de calatrava, which has slices of hard bread, eggs, milk, sugar and caramel; cheesecake with cranberries, and finally cottage cheese with honey, one of the star products of the Alpujarra cuisine and can be chestnut, rosemary, thyme and oak honey.
